AKA – Meal prep that doesn’t suck

This was what I made to take to work the other day. They took 20 mins to make and just a few mins to assemble the tacos the day of. The secret? BUY TACO SEASONING + put it on chicken. And you’re done. The end. SO easy. Cut up an avocado and throw it on there, as well as maybe some lettuce or arugula if you feel #extra.

Ingredients: (makes 4 servings)

  • Soft taco shells
  • 1 lb chicken breast
  • 1 packet taco seasoning
  • 2 avocados

DIRECTIONS:

  1. Bake the chicken breasts in the oven at 350 degrees for about 15-20 minutes, or until fully cooked.
  2. When the chicken is cooked, shred it with a knife and fork.
  3. Mix the taco seasoning into the shredded chicken.
  4. Assemble the tacos with chicken, avocado, salsa, and veggies. YUM! That’s it! Add some cheese if you like. 🙂
